Description

A delicious and cheesy zucchini casserole that is easy to make and perfect for any meal.


Ingredients

  • 2 medium zucchinis, sliced (about 4 cups)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup ricotta cheese
  • 2 large eggs
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup breadcrumbs
  • 2 tablespoons olive oil
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.
  2. In a large skillet over medium heat, add the olive oil. Sauté the diced onion and minced garlic until the onion is translucent, about 3-4 minutes.
  3. Add the sliced zucchini to the skillet and cook for an additional 5-7 minutes, until the zucchini is tender. Remove from heat and let cool slightly.
  4. In a large mixing bowl, combine the ricotta cheese, eggs, Italian seasoning, salt, and black pepper. Mix until well combined.
  5. Stir in the sautéed zucchini mixture, cheddar cheese, and mozzarella cheese into the ricotta mixture. Mix until all ingredients are evenly incorporated.
  6. Pour the zucchini and cheese mixture into the prepared baking dish, spreading it evenly.
  7. In a small bowl, mix the breadcrumbs with the grated Parmesan cheese. Sprinkle the breadcrumb mixture evenly over the casserole.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
  9. Remove from the oven and let it cool for about 5 minutes. Garnish with chopped parsley before serving.

  • For a spicier kick, add 1/2 teaspoon of red pepper flakes to the zucchini mixture.
