Description
A delicious and cheesy zucchini casserole that is easy to make and perfect for any meal.
Ingredients
- 2 medium zucchinis, sliced (about 4 cups)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup ricotta cheese
- 2 large eggs
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup breadcrumbs
- 2 tablespoons olive oil
- 1/4 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or olive oil.
- In a large skillet over medium heat, add the olive oil. Sauté the diced onion and minced garlic until the onion is translucent, about 3-4 minutes.
- Add the sliced zucchini to the skillet and cook for an additional 5-7 minutes, until the zucchini is tender. Remove from heat and let cool slightly.
- In a large mixing bowl, combine the ricotta cheese, eggs, Italian seasoning, salt, and black pepper. Mix until well combined.
- Stir in the sautéed zucchini mixture, cheddar cheese, and mozzarella cheese into the ricotta mixture. Mix until all ingredients are evenly incorporated.
- Pour the zucchini and cheese mixture into the prepared baking dish, spreading it evenly.
- In a small bowl, mix the breadcrumbs with the grated Parmesan cheese. Sprinkle the breadcrumb mixture evenly over the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
- Remove from the oven and let it cool for about 5 minutes. Garnish with chopped parsley before serving.
Notes
- For a spicier kick, add 1/2 teaspoon of red pepper flakes to the zucchini mixture.
- Substitute half of the zucchini with yellow squash or add chopped spinach for extra nutrients and flavor.
