Description
A delicious and cheesy zucchini casserole that is easy to make and perfect for any meal.
Ingredients
- 2 medium zucchinis, sliced into thin rounds
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 cup sour cream
- 1 large egg
- 1 cup breadcrumbs
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons olive oil
- ¼ cup grated Parmesan cheese
Instructions
- Preheat your oven to 350°F.
- In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
- In a large bowl, combine the sliced zucchini, sautéed onion and garlic, sour cream, egg, cheddar cheese, oregano, salt, and pepper. Mix well until all ingredients are evenly coated.
- Transfer the zucchini mixture to a greased 9×13 inch baking dish, spreading it out evenly.
- In a separate bowl, mix the breadcrumbs and Parmesan cheese together. Sprinkle the breadcrumb mixture evenly over the zucchini layer.
- Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is bubbly.
- Let the casserole cool for about 5 minutes before serving.
Notes
- For a spicier kick, add ½ teaspoon of red pepper flakes to the zucchini mixture.
- You can also substitute half of the zucchini with yellow squash for a colorful twist.
