Description

A delicious and cheesy zucchini casserole that is easy to make and perfect for any meal.


Ingredients

  • 2 medium zucchinis, sliced into thin rounds
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup sour cream
  • 1 large egg
  • 1 cup breadcrumbs
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil
  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 350°F.
  2. In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  3. In a large bowl, combine the sliced zucchini, sautéed onion and garlic, sour cream, egg, cheddar cheese, oregano, salt, and pepper. Mix well until all ingredients are evenly coated.
  4. Transfer the zucchini mixture to a greased 9×13 inch baking dish, spreading it out evenly.
  5. In a separate bowl, mix the breadcrumbs and Parmesan cheese together. Sprinkle the breadcrumb mixture evenly over the zucchini layer.
  6. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the casserole is bubbly.
  7. Let the casserole cool for about 5 minutes before serving.

Notes

  • For a spicier kick, add ½ teaspoon of red pepper flakes to the zucchini mixture.
  • You can also substitute half of the zucchini with yellow squash for a colorful twist.
