Description
Delicious grilled eggplant rolls filled with a creamy cheese mixture, topped with marinara sauce and baked to perfection.
Ingredients
- 2 medium eggplants, sliced lengthwise into 1/4-inch thick strips
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
- 1/2 cup marinara sauce
Instructions
- Preheat the grill to medium-high heat.
- Sprinkle the eggplant slices with salt and let them sit for about 15 minutes to draw out excess moisture. Rinse and pat dry with paper towels.
- Brush both sides of the eggplant slices with olive oil. Grill the slices for about 3-4 minutes on each side, until they are tender and have grill marks. Remove from the grill and let cool slightly.
- In a mixing bowl, combine ricotta cheese, half of the mozzarella cheese, Parmesan cheese, basil, garlic powder, and black pepper. Mix until well combined.
- Take one grilled eggplant slice and place about 2 tablespoons of the cheese mixture at one end. Roll it up tightly and place seam-side down on a baking dish. Repeat with the remaining eggplant slices and cheese mixture.
- Preheat the oven to 375°F. Pour marinara sauce over the eggplant rolls and sprinkle the remaining mozzarella cheese on top.
- Bake for 20-25 minutes, until the cheese is melted and bubbly.
- Let cool for a few minutes before serving.
Notes
- For a smoky flavor, try adding a pinch of smoked paprika to the cheese mixture.
- You can also substitute the ricotta with cottage cheese for a lighter option.
- For added texture, mix in some chopped spinach or sun-dried tomatoes into the cheese filling.
