A flavorful twist on traditional pizza, this Irresistible Zucchini Pizza Casserole combines layers of zucchini, sausage, and cheese for a delicious and satisfying meal.


Ingredients

  • 2 medium zucchinis, cut into thin rounds
  • 1 pound ground Italian sausage (or turkey sausage)
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped bell pepper (any color)
  • 1/2 cup sliced black olives
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, brown the ground sausage over medium heat, breaking it into crumbles until fully cooked. Drain excess fat if necessary.
  3. Stir in the marinara sauce along with oregano, garlic powder, salt, and pepper. Allow the mixture to simmer for about 5 minutes.
  4. In a greased 9×13 inch baking dish, arrange half of the zucchini rounds in an even layer.
  5. Spoon half of the sausage mixture over the zucchini, followed by half of the mozzarella cheese, bell pepper, and black olives.
  6. Repeat the layering process with the remaining zucchini, sausage mixture, mozzarella, bell pepper, and olives.
  7. Sprinkle the top with grated Parmesan cheese and red pepper flakes if desired.
  8. Cover the dish with aluminum foil and bake for 25 minutes.
  9. Remove the foil and continue baking for another 15 minutes, or until the cheese is melted and golden brown.
  10. Let it sit for 5-10 minutes before serving, garnished with fresh basil leaves if you like.
