A flavorful twist on traditional pizza, this Irresistible Zucchini Pizza Casserole combines layers of zucchini, sausage, and cheese for a delicious and satisfying meal.
Ingredients
- 2 medium zucchinis, cut into thin rounds
- 1 pound ground Italian sausage (or turkey sausage)
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup chopped bell pepper (any color)
- 1/2 cup sliced black olives
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet, brown the ground sausage over medium heat, breaking it into crumbles until fully cooked. Drain excess fat if necessary.
- Stir in the marinara sauce along with oregano, garlic powder, salt, and pepper. Allow the mixture to simmer for about 5 minutes.
- In a greased 9×13 inch baking dish, arrange half of the zucchini rounds in an even layer.
- Spoon half of the sausage mixture over the zucchini, followed by half of the mozzarella cheese, bell pepper, and black olives.
- Repeat the layering process with the remaining zucchini, sausage mixture, mozzarella, bell pepper, and olives.
- Sprinkle the top with grated Parmesan cheese and red pepper flakes if desired.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and continue baking for another 15 minutes, or until the cheese is melted and golden brown.
- Let it sit for 5-10 minutes before serving, garnished with fresh basil leaves if you like.
