Description

Delicious Italian Basil Chicken Cutlets topped with fresh tomatoes and creamy burrata cheese, perfect for a delightful meal.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup Italian-style breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1 tablespoon olive oil
  • 2 cups cherry tomatoes, halved
  • 8 ounces burrata cheese
  • 1 tablespoon balsamic glaze
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch. Season both sides with salt and pepper.
  3. Set up a breading station: in one shallow dish, place the flour; in a second dish, add the beaten eggs; and in a third dish, combine the breadcrumbs, Parmesan cheese, and chopped basil.
  4. Dredge each chicken cutlet in flour, shaking off the excess. Dip into the beaten eggs, then coat with the breadcrumb mixture, pressing gently to adhere.
  5. Heat olive oil in a large skillet over medium heat. Add the breaded chicken cutlets and cook for 3-4 minutes on each side, or until golden brown and cooked through. Transfer the cutlets to the prepared baking sheet.
  6. Scatter the halved cherry tomatoes around the chicken on the baking sheet. Bake in the preheated oven for 10-12 minutes, until the tomatoes are softened and the chicken is cooked through.
  7. Remove from the oven and top each cutlet with a piece of burrata cheese. Return to the oven for an additional 2-3 minutes to warm the burrata.
  8. Drizzle with balsamic glaze and garnish with fresh basil leaves before serving.

Notes

  • For a healthier option, bake the breaded chicken cutlets at 375°F (190°C) for about 20-25 minutes instead of frying.
  • Add a splash of lemon juice over the finished dish for a bright flavor boost.
  • You can also substitute the burrata with fresh mozzarella if preferred.
