Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup Italian-style breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- 1 tablespoon olive oil
- 2 cups cherry tomatoes, halved
- 8 ounces burrata cheese
- 1 tablespoon balsamic glaze
- Fresh basil leaves for garnish
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch. Season both sides with salt and pepper.
- Set up a breading station: in one shallow dish, place the flour; in a second dish, add the beaten eggs; and in a third dish, combine the breadcrumbs, Parmesan cheese, and chopped basil.
- Dredge each chicken cutlet in flour, shaking off the excess. Dip into the beaten eggs, then coat with the breadcrumb mixture, pressing gently to adhere.
- Heat olive oil in a large skillet over medium heat. Add the breaded chicken cutlets and cook for 3-4 minutes on each side, or until golden brown and cooked through. Transfer the cutlets to the prepared baking sheet.
- Scatter the halved cherry tomatoes around the chicken on the baking sheet. Bake in the preheated oven for 10-12 minutes, until the tomatoes are softened and the chicken is cooked through.
- Remove from the oven and top each cutlet with a piece of burrata cheese. Return to the oven for an additional 2-3 minutes to warm the burrata.
- Drizzle with balsamic glaze and garnish with fresh basil leaves before serving.
Notes
- For a healthier option, bake the breaded chicken cutlets at 375°F (190°C) for about 20-25 minutes instead of frying.
- Add a splash of lemon juice over the finished dish for a bright flavor boost.
- You can also substitute the burrata with fresh mozzarella if preferred.
