Ingredients

  • 2 cloves garlic, minced
  • 1 small head of green cabbage, chopped (about 4 cups)
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the chopped cabbage to the skillet and cook, stirring occasionally, for about 10 minutes, or until the cabbage is tender.
  4. Pour in the diced tomatoes (with their juice), oregano, basil, and red pepper flakes if using. Season with salt and pepper. Stir well to combine.
  5. Reduce the heat to low, cover the skillet, and let it simmer for 15 minutes, stirring occasionally.
  6. Once the cabbage is fully cooked and the flavors have melded, remove from heat and sprinkle with grated Parmesan cheese.
