Description
A delicious and flavorful Italian Grinder Chicken Salad perfect for sandwiches.
Ingredients
- 2 cups cooked chicken, shredded
- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 1 tablespoon Dijon mustard
- 1 tablespoon red wine vinegar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup diced celery
- 1/2 cup diced red bell pepper
- 1/4 cup sliced black olives
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 4 hoagie rolls or sub sandwich bread
Instructions
- In a large mixing bowl, combine the shredded chicken, mayonnaise, Greek yogurt, Dijon mustard, red wine vinegar, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix until well combined.
- Fold in the diced celery, diced red bell pepper, sliced black olives, grated Parmesan cheese, and chopped parsley until evenly distributed.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
- When ready to serve, slice the hoagie rolls in half and scoop a generous portion of the chicken salad into each roll.
- Serve immediately and enjoy!
Notes
- For a lighter version, substitute half of the mayonnaise with additional Greek yogurt.
- Add sliced avocado or fresh spinach for extra flavor and nutrition.
