Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon red wine vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup diced celery
  • 1/2 cup diced red bell pepper
  • 1/4 cup sliced black olives
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 4 hoagie rolls or sub sandwich bread

Instructions

  1. In a large mixing bowl, combine the shredded chicken, mayonnaise, Greek yogurt, Dijon mustard, red wine vinegar, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Mix until well combined.
  2. Fold in the diced celery, diced red bell pepper, sliced black olives, grated Parmesan cheese, and chopped parsley until evenly distributed.
  3. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.
  4. When ready to serve, slice the hoagie rolls in half and scoop a generous portion of the chicken salad into each roll.
  5. Serve immediately and enjoy!
