A refreshing and hearty Italian Grinder Salad packed with fresh vegetables, salami, and provolone cheese, perfect for a light meal or side dish.
Ingredients
- 2 cups romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, thinly sliced
- 1/2 cup green bell pepper, diced
- 1/2 cup black olives, sliced
- 1/2 cup salami, diced
- 1/2 cup provolone cheese, diced
- 1/4 cup pepperoncini, sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine the romaine lettuce, cherry tomatoes, cucumber, red onion, green bell pepper, black olives, salami, provolone cheese, pepperoncini, and parsley. Toss gently to mix all the ingredients evenly.
- In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
- Drizzle the dressing over the salad and toss again to coat all the ingredients with the dressing.
- Let the salad sit for about 10 minutes to allow the flavors to meld.
- Serve immediately or refrigerate for up to 2 hours before serving for a chilled option.
Notes
- For a vegetarian version, omit the salami and provolone cheese and add extra chickpeas for protein.
