Ingredients

  • 2 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup green bell pepper, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup salami, diced
  • 1/2 cup provolone cheese, diced
  • 1/4 cup pepperoncini, sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the romaine lettuce, cherry tomatoes, cucumber, red onion, green bell pepper, black olives, salami, provolone cheese, pepperoncini, and parsley. Toss gently to mix all the ingredients evenly.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper until well combined.
