Ingredients
- 1 cup corn kernels (fresh or frozen)
- 1/2 cup all-purpose flour
- 1/2 cup cornmeal
- 1/4 cup shredded cheddar cheese
- 1/4 cup diced jalapeños (fresh or pickled)
- 1/4 cup milk
- 1 large egg
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Oil for frying
Instructions
- In a large mixing bowl, combine the corn kernels, flour, cornmeal, cheddar cheese, and diced jalapeños.
- In a separate bowl, whisk together the milk, egg, baking powder, salt, and black pepper until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Heat about 2 inches of oil in a deep skillet or pot over medium heat until it reaches 350°F.
- Using a tablespoon, drop spoonfuls of the batter into the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes on each side or until golden brown.
- Remove the nuggets with a slotted spoon and drain on paper towels. Serve warm.
Notes
- For a spicier kick, add more diced jalapeños or a pinch of cayenne pepper to the batter.
- Serve with a side of ranch dressing or salsa for dipping to enhance the flavor.
