Description

A delicious and flavorful dish featuring chicken thighs glazed with a sweet and spicy jalapeño peach sauce.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup peach preserves
  • 23 fresh jalapeños, finely chopped (adjust based on spice preference)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon smoked paprika
  • 1 tablespoon fresh lime juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the olive oil, salt, black pepper, garlic powder, and onion powder. Add the chicken thighs and toss to coat evenly.
  3. Place the seasoned chicken thighs in a single layer on a baking sheet lined with parchment paper.
  4. In a separate bowl, mix together the peach preserves, chopped jalapeños, apple cider vinegar, soy sauce, smoked paprika, and lime juice until well combined.
  5. Pour half of the peach glaze over the chicken thighs, reserving the other half for later.
  6. Bake the chicken in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
  7. During the last 5 minutes of baking, brush the reserved peach glaze over the chicken for extra flavor.
  8. Remove the chicken from the oven and let it rest for 5 minutes before serving.
