A delicious and flavorful dish featuring chicken thighs glazed with a sweet and spicy jalapeño peach sauce.
Ingredients
- 2 pounds boneless, skinless chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 cup peach preserves
- 2–3 fresh jalapeños, finely chopped (adjust based on spice preference)
- 2 tablespoons apple cider vinegar
- 1 tablespoon soy sauce
- 1 teaspoon smoked paprika
- 1 tablespoon fresh lime juice
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the olive oil, salt, black pepper, garlic powder, and onion powder. Add the chicken thighs and toss to coat evenly.
- Place the seasoned chicken thighs in a single layer on a baking sheet lined with parchment paper.
- In a separate bowl, mix together the peach preserves, chopped jalapeños, apple cider vinegar, soy sauce, smoked paprika, and lime juice until well combined.
- Pour half of the peach glaze over the chicken thighs, reserving the other half for later.
- Bake the chicken in the preheated oven for 25-30 minutes, or until the internal temperature reaches 165°F (74°C).
- During the last 5 minutes of baking, brush the reserved peach glaze over the chicken for extra flavor.
- Remove the chicken from the oven and let it rest for 5 minutes before serving.
Notes
- For a sweeter glaze, add an extra tablespoon of peach preserves.
- For a smoky flavor, grill the chicken instead of baking it.
