A quick and delicious Japanese-style stir-fry featuring zucchini and onion, perfect for a healthy meal.
Ingredients
- 2 medium zucchinis, sliced into half-moons
- 1 medium onion, thinly sliced
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 tablespoon mirin (or rice vinegar)
- 1 teaspoon sesame oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon sesame seeds (optional)
- 2 green onions, chopped (for garnish)
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced onions and stir-fry for about 2-3 minutes until they start to become translucent.
- Add the minced garlic and stir-fry for an additional 30 seconds until fragrant.
- Add the sliced zucchinis to the skillet and stir-fry for 4-5 minutes, or until they are tender but still crisp.
- Pour in the soy sauce, mirin, sesame oil, salt, and black pepper. Stir well to combine and cook for another 1-2 minutes.
- Remove from heat and sprinkle with sesame seeds and chopped green onions before serving.
Notes
- For added protein, toss in some cooked chicken, shrimp, or tofu during the stir-fry.
- Experiment with other vegetables like bell peppers or snap peas for a colorful twist.
