Description

A quick and delicious Japanese-style stir-fry featuring zucchini and onion, perfect for a healthy meal.


Ingredients

  • 2 medium zucchinis, sliced into half-moons
  • 1 medium onion, thinly sliced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon mirin (or rice vinegar)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon sesame seeds (optional)
  • 2 green onions, chopped (for garnish)

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced onions and stir-fry for about 2-3 minutes until they start to become translucent.
  3. Add the minced garlic and stir-fry for an additional 30 seconds until fragrant.
  4. Add the sliced zucchinis to the skillet and stir-fry for 4-5 minutes, or until they are tender but still crisp.
  5. Pour in the soy sauce, mirin, sesame oil, salt, and black pepper. Stir well to combine and cook for another 1-2 minutes.
  6. Remove from heat and sprinkle with sesame seeds and chopped green onions before serving.

  • For added protein, toss in some cooked chicken, shrimp, or tofu during the stir-fry.
