Description
A delicious and healthy Japanese Zucchini & Onion Stir-Fry that is quick to prepare and packed with flavor.
Ingredients
- 2 medium zucchinis, sliced into half-moons
- 1 large onion, thinly sliced
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon mirin (optional)
- 1 teaspoon sesame oil
- 1/2 teaspoon ground black pepper
- 1 tablespoon sesame seeds (for garnish)
- 2 green onions, chopped (for garnish)
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the sliced onions and stir-fry for about 2-3 minutes until they start to become translucent.
- Add the minced garlic and stir for another 30 seconds until fragrant.
- Add the sliced zucchinis to the skillet and stir-fry for 5-7 minutes, or until they are tender but still crisp.
- Pour in the soy sauce, mirin (if using), sesame oil, and black pepper. Stir well to combine and cook for an additional 2 minutes.
- Remove from heat and transfer to a serving dish. Garnish with sesame seeds and chopped green onions before serving.
Notes
- For added protein, consider adding sliced chicken, shrimp, or tofu during step 2.
- You can substitute the zucchinis with bell peppers or snap peas for a different flavor and texture.
