Description

A delicious and healthy Japanese Zucchini & Onion Stir-Fry that is quick to prepare and packed with flavor.


Ingredients

  • 2 medium zucchinis, sliced into half-moons
  • 1 large onion, thinly sliced
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin (optional)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon sesame seeds (for garnish)
  • 2 green onions, chopped (for garnish)

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced onions and stir-fry for about 2-3 minutes until they start to become translucent.
  3. Add the minced garlic and stir for another 30 seconds until fragrant.
  4. Add the sliced zucchinis to the skillet and stir-fry for 5-7 minutes, or until they are tender but still crisp.
  5. Pour in the soy sauce, mirin (if using), sesame oil, and black pepper. Stir well to combine and cook for an additional 2 minutes.
  6. Remove from heat and transfer to a serving dish. Garnish with sesame seeds and chopped green onions before serving.

Notes

  • For added protein, consider adding sliced chicken, shrimp, or tofu during step 2.
  • You can substitute the zucchinis with bell peppers or snap peas for a different flavor and texture.
