Description

A quick and easy stir-fry recipe featuring Japanese zucchini, perfect for a healthy side dish or light meal.

Ingredients

  • 2 medium-sized Japanese zucchini (about 1 pound total), sliced into thin rounds
  • 1 tablespoon vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste
  • 2 green onions, chopped (for garnish)

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the sliced zucchini to the skillet and stir-fry for 3-5 minutes until they start to soften.
  4. Drizzle the soy sauce, sesame oil, and rice vinegar over the zucchini. Stir well to combine.
  5. Cook for an additional 2-3 minutes, allowing the flavors to meld and the zucchini to become tender but still crisp.
  6. Season with salt and pepper to taste.
  7. Remove from heat and sprinkle sesame seeds and chopped green onions on top before serving.

Notes

  • For added protein, consider tossing in some cooked chicken or tofu during the stir-fry.
  • Experiment with different seasonings like ginger or chili flakes for a spicy kick.
