Ingredients
- 2 medium-sized Japanese zucchini (about 1 pound total), sliced into thin rounds
- 1 tablespoon vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon rice vinegar
- 1 tablespoon sesame seeds
- Salt and pepper to taste
- 2 green onions, chopped (for garnish)
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the sliced zucchini to the skillet and stir-fry for 3-5 minutes until they start to soften.
- Drizzle the soy sauce, sesame oil, and rice vinegar over the zucchini. Stir well to combine.
- Cook for an additional 2-3 minutes, allowing the flavors to meld and the zucchini to become tender but still crisp.
- Season with salt and pepper to taste.
- Remove from heat and sprinkle sesame seeds and chopped green onions on top before serving.
