Ingredients

  • 2 large russet potatoes (about 1.5 pounds), peeled and grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • 1 cup shredded Jarlsberg cheese
  • 1/4 cup vegetable oil (for frying)
  • Sour cream and chives (for serving, optional)

Instructions

  1. Place the grated potatoes in a clean kitchen towel and squeeze out as much moisture as possible. This will help achieve a crispy texture.
  2. In a large bowl, combine the grated potatoes, salt, black pepper, garlic powder, onion powder, flour, and beaten egg. Mix until well combined.
  3. Heat 2 tablespoons of vegetable oil in a large skillet over medium heat.
  4. Take a handful of the potato mixture and flatten it into a patty about 1/2 inch thick. Place a tablespoon of shredded Jarlsberg cheese in the center, then fold the edges over to encase the cheese.
  5. Carefully place the stuffed patty in the hot skillet. Repeat with additional patties, making sure not to overcrowd the pan.
  6. Cook for about 4-5 minutes on each side, or until golden brown and crispy. Add more oil as needed for frying.
  7. Once cooked, transfer the rösti to a paper towel-lined plate to drain excess oil.
  8. Serve warm with sour cream and chopped chives, if desired.
