Ingredients
- 2 pounds pork shoulder or pork loin
- 1/2 cup fresh orange juice
- 1/4 cup fresh lime juice
- 1/4 cup olive oil
- 1 tablespoon minced garlic (about 4 cloves)
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup fresh cilantro, chopped (for garnish)
Instructions
- In a large bowl, whisk together the orange juice, lime juice, olive oil, minced garlic, cumin, oregano, salt, black pepper, and red pepper flakes (if using) until well combined.
- Place the pork in a resealable plastic bag or a shallow dish and pour the marinade over the meat, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight for maximum flavor.
- Preheat your oven to 325°F (163°C).
- Remove the pork from the marinade and place it in a roasting pan. Reserve the marinade for basting.
- Roast the pork in the preheated oven for about 2 to 2.5 hours, or until the internal temperature reaches 145°F (63°C). Baste the pork with the reserved marinade every 30 minutes.
- Once cooked, remove the pork from the oven and let it rest for 15 minutes before slicing.
- Garnish with chopped cilantro before serving.
