Description

A flavorful and juicy Cuban-style pork dish marinated in a citrusy mojo sauce, perfect for any occasion.

Ingredients

  • 2 pounds pork shoulder or pork loin
  • 1/2 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 1/4 cup olive oil
  • 1 tablespoon minced garlic (about 4 cloves)
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions

  1. In a large bowl, whisk together the orange juice, lime juice, olive oil, minced garlic, cumin, oregano, salt, black pepper, and red pepper flakes (if using) until well combined.
  2. Place the pork in a resealable plastic bag or a shallow dish and pour the marinade over the meat, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight for maximum flavor.
  3. Preheat your oven to 325°F (163°C).
  4. Remove the pork from the marinade and place it in a roasting pan. Reserve the marinade for basting.
  5. Roast the pork in the preheated oven for about 2 to 2.5 hours, or until the internal temperature reaches 145°F (63°C). Baste the pork with the reserved marinade every 30 minutes.
  6. Once cooked, remove the pork from the oven and let it rest for 15 minutes before slicing.
  7. Garnish with chopped cilantro before serving.

Notes

  • For a smoky flavor, consider adding a teaspoon of smoked paprika to the marinade.
  • If you want a spicier kick, add a diced jalapeño to the marinade before marinating the pork.
