Ingredients
- 2 ripe mangoes, peeled and diced
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup lime juice (about 2 limes)
- 2 tablespoons olive oil
- 1 teaspoon honey (optional)
- Salt and pepper to taste
Instructions
- In a large mixing bowl, combine the diced mango, red bell pepper, cucumber, cherry tomatoes, red onion, and cilantro. Gently toss to mix the ingredients evenly.
- In a small bowl, whisk together the lime juice, olive oil, honey (if using), salt, and pepper until well combined.
- Pour the dressing over the mango and veggie mixture. Toss gently to coat all the ingredients with the dressing.
- Let the salad sit for about 10 minutes to allow the flavors to meld together.
- Serve chilled or at room temperature.
