Ingredients

  • 2 pounds bone-in, skin-on chicken thighs
  • 1 cup fresh pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • 2 tablespoons sesame seeds (optional)
  • 2 green onions, sliced (for garnish)

Instructions

  1. In a large bowl, whisk together pineapple juice, soy sauce, brown sugar, honey, rice vinegar, garlic, ginger, and black pepper until well combined.
  2. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or up to overnight for maximum flavor.
  3. Preheat your oven to 400°F (200°C).
  4. Remove the chicken from the marinade and place it in a baking dish. Reserve the marinade for later use.
  5. Bake the chicken thighs in the preheated oven for 30 minutes.
  6. While the chicken is baking, pour the reserved marinade into a small saucepan and bring it to a boil over medium-high heat.
  7. In a small bowl, mix cornstarch and water to create a slurry. Once the marinade is boiling, stir in the cornstarch mixture and cook for an additional 2-3 minutes, or until thickened.
  8. After 30 minutes, remove the chicken from the oven and brush it with the thickened marinade. Return to the oven and bake for an additional 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  9. Once cooked, remove the chicken from the oven and let it rest for 5 minutes. Garnish with sesame seeds and sliced green onions before serving.
