Ingredients
- 2 pounds bone-in, skin-on chicken thighs
- 1 cup fresh pineapple juice
- 1/2 cup soy sauce
- 1/4 cup brown sugar
- 2 tablespoons honey
- 2 tablespoons rice vinegar
- 4 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon black pepper
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 tablespoons sesame seeds (optional)
- 2 green onions, sliced (for garnish)
Instructions
- In a large bowl, whisk together pineapple juice, soy sauce, brown sugar, honey, rice vinegar, garlic, ginger, and black pepper until well combined.
- Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or up to overnight for maximum flavor.
- Preheat your oven to 400°F (200°C).
- Remove the chicken from the marinade and place it in a baking dish. Reserve the marinade for later use.
- Bake the chicken thighs in the preheated oven for 30 minutes.
- While the chicken is baking, pour the reserved marinade into a small saucepan and bring it to a boil over medium-high heat.
- In a small bowl, mix cornstarch and water to create a slurry. Once the marinade is boiling, stir in the cornstarch mixture and cook for an additional 2-3 minutes, or until thickened.
- After 30 minutes, remove the chicken from the oven and brush it with the thickened marinade. Return to the oven and bake for an additional 10-15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Once cooked, remove the chicken from the oven and let it rest for 5 minutes. Garnish with sesame seeds and sliced green onions before serving.
