Ingredients
- 2 cups shredded lettuce
- 1 cup shredded carrots
- 1 cup cucumber, thinly sliced
- 1 cup imitation crab meat (kani), shredded
- 1/4 cup green onions, chopped
- 1/4 cup mayonnaise
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 1/2 teaspoon soy sauce
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon sesame seeds (optional, for garnish)
Instructions
- In a large mixing bowl, combine the shredded lettuce, shredded carrots, sliced cucumber, imitation crab meat, and chopped green onions. Toss gently to mix the ingredients evenly.
- In a separate small bowl, whisk together the mayonnaise, rice vinegar, sesame oil, sugar, soy sauce, salt, and black pepper until smooth and well combined.
- Pour the dressing over the salad mixture and toss gently until all the ingredients are coated with the dressing.
- If time allows, chill the salad in the refrigerator for about 15-30 minutes to enhance the flavors.
- Before serving, sprinkle sesame seeds on top for garnish, if desired. Serve immediately.

- For a crunchier texture, add sliced radishes or bell peppers.
- To make it a heartier meal, serve the salad over a bed of cooked quinoa or rice.
