Description
A delicious low-carb version of the classic Chicken Cordon Bleu, featuring crispy chicken, savory ham, and melted Swiss cheese.
Ingredients
- 2 large boneless, skinless chicken breasts
- 4 ounces sliced ham
- 4 ounces sliced Swiss cheese
- 1 cup almond flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 large eggs
- 2 tablespoons Dijon mustard
- ½ cup grated Parmesan cheese
- ½ cup olive oil or avocado oil (for frying)
Instructions
- Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place each chicken breast between two pieces of plastic wrap and pound them to about ½ inch thick using a meat mallet or rolling pin.
- Spread 1 tablespoon of Dijon mustard on each chicken breast. Layer 2 ounces of ham and 2 ounces of Swiss cheese on top of each breast.
- Roll each chicken breast tightly, starting from one end, and secure with toothpicks.
- In a shallow bowl, whisk together the eggs. In another bowl, combine almond flour, garlic powder, onion powder, paprika, salt, and black pepper.
- Dip each chicken roll in the egg mixture, then coat thoroughly with the almond flour mixture.
- Heat the olive oil in a large skillet over medium heat. Add the chicken rolls and cook for about 4-5 minutes on each side, until golden brown.
- Transfer the chicken rolls to the prepared baking sheet and sprinkle with grated Parmesan cheese. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F).
- Remove toothpicks before serving. Let rest for 5 minutes, then slice and serve warm.
Notes
- For added flavor, try using smoked ham or adding fresh herbs like thyme or rosemary to the almond flour mixture.
- To make this dish even more indulgent, serve with a creamy mustard sauce made from heavy cream and Dijon mustard.
