Description

A delicious low-carb version of the classic Chicken Cordon Bleu, featuring crispy chicken, savory ham, and melted Swiss cheese.


Ingredients

  • 2 large boneless, skinless chicken breasts
  • 4 ounces sliced ham
  • 4 ounces sliced Swiss cheese
  • 1 cup almond flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons Dijon mustard
  • ½ cup grated Parmesan cheese
  • ½ cup olive oil or avocado oil (for frying)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place each chicken breast between two pieces of plastic wrap and pound them to about ½ inch thick using a meat mallet or rolling pin.
  3. Spread 1 tablespoon of Dijon mustard on each chicken breast. Layer 2 ounces of ham and 2 ounces of Swiss cheese on top of each breast.
  4. Roll each chicken breast tightly, starting from one end, and secure with toothpicks.
  5. In a shallow bowl, whisk together the eggs. In another bowl, combine almond flour, garlic powder, onion powder, paprika, salt, and black pepper.
  6. Dip each chicken roll in the egg mixture, then coat thoroughly with the almond flour mixture.
  7. Heat the olive oil in a large skillet over medium heat. Add the chicken rolls and cook for about 4-5 minutes on each side, until golden brown.
  8. Transfer the chicken rolls to the prepared baking sheet and sprinkle with grated Parmesan cheese. Bake in the preheated oven for 15-20 minutes, or until the chicken is cooked through (internal temperature of 165°F).
  9. Remove toothpicks before serving. Let rest for 5 minutes, then slice and serve warm.

Notes

  • For added flavor, try using smoked ham or adding fresh herbs like thyme or rosemary to the almond flour mixture.
