Ingredients

  • 2 medium eggplants, sliced into 1/4-inch rounds
  • 1 teaspoon salt
  • 1 pound ground beef or lamb
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes, drained
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup ricotta cheese
  • 1 large egg
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sprinkle the sliced eggplant with salt and let it sit for about 30 minutes to draw out moisture. Rinse and pat dry.
  3. In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, sautéing until softened, about 3-4 minutes.
  4. Add the ground beef or lamb to the skillet, breaking it apart with a spoon. Cook until browned, about 5-7 minutes.
  5. Stir in the drained diced tomatoes, oregano, cinnamon, black pepper, and red pepper flakes. Simmer for 10 minutes, then remove from heat.
  6. In a separate bowl, combine ricotta cheese, egg, and half of the mozzarella cheese. Mix well.
  7. In a greased 9×13-inch baking dish, layer half of the eggplant slices on the bottom. Spread half of the meat mixture over the eggplant, followed by half of the ricotta mixture. Repeat the layers with the remaining ingredients.
  8. Top the final layer with the remaining mozzarella and sprinkle with Parmesan cheese.
  9. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.
  10. Let the moussaka cool for 10 minutes before slicing and serving.

Notes

  • For a vegetarian version, substitute the ground meat with lentils or mushrooms.
  • Add a layer of spinach or zucchini for extra vegetables and flavor.
