For the Key Lime Filling:

  • Zest of 10 key limes (or 5 Persian limes)
  • 2 large egg yolks
  • 2 cans (14oz each, 792g total) sweetened condensed milk
  • ⅓ cup (80g) full-fat sour cream
  • 1 cup (240g) key lime juice (can be a mix of Persian and key limes)
  • 1 tsp pure vanilla extract
  • Pinch of fine sea salt

For the Velvety Whipped Topping (Optional but Recommended!):

  • 2 cups heavy whipping cream
  • 2 tsp pure vanilla extract
  • Pinch of fine sea salt
  • ¼ cup powdered sugar

Instructions

Crafting the Perfect Crust:

  • Preheat oven to 350°F (175°C).
  • Line the bottom of an 8 or 9-inch springform pan with parchment paper.
  • Finely grind the cookies and pecans in a food processor.
  • Stir in melted butter and powdered sugar until the texture resembles wet sand.
  • Firmly press the mixture into the pan, covering the bottom and slightly up the sides.
  • Bake for 10 minutes, then let it cool.

2. Preparing the Silky Key Lime Filling:

  • Zest and juice the limes, ensuring you have 1 full cup of juice.
  • In a bowl, whisk together the zest, juice, sweetened condensed milk, vanilla, salt, egg yolks, and sour cream until smooth and creamy.
  • Pour the filling into the cooled crust.
  • Bake at 350°F for about 15-25 minutes, or until the center has a slight jiggle.
  • Let the pie cool to room temperature, then refrigerate for at least 4 hours (overnight for best results).

3. Whipping Up the Fluffy Topping:
