Description

Lasagna Soup is a cozy comfort dish that combines the flavors of traditional lasagna in a hearty soup form.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 pound ground beef or Italian sausage
  • 1 (28-ounce) can crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 8 ounces uncooked lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  2. Add the ground beef or Italian sausage to the pot. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary.
  3. Stir in the crushed tomatoes, broth, dried basil, oregano, red pepper flakes (if using), and season with salt and pepper. Bring the mixture to a boil.
  4. Once boiling, add the broken lasagna noodles. Reduce heat and simmer for about 15-20 minutes, or until the noodles are tender.
  5. In a small bowl, mix together the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese.
  6. To serve, ladle the soup into bowls and add a dollop of the ricotta mixture on top. Sprinkle with the remaining mozzarella and Parmesan cheese. Garnish with fresh basil leaves if desired.

Notes

  • For a vegetarian version, substitute the meat with mushrooms or lentils and use vegetable broth.
  • Add chopped spinach or kale during the last few minutes of cooking for added nutrition and flavor.
