Description
Lasagna Soup is a cozy comfort dish that combines the flavors of traditional lasagna in a hearty soup form.
Ingredients
- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 pound ground beef or Italian sausage
- 1 (28-ounce) can crushed tomatoes
- 4 cups chicken or vegetable broth
- 2 teaspoons dried basil
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- 8 ounces uncooked lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh basil leaves for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the ground beef or Italian sausage to the pot. Cook until browned, breaking it apart with a spoon, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the crushed tomatoes, broth, dried basil, oregano, red pepper flakes (if using), and season with salt and pepper. Bring the mixture to a boil.
- Once boiling, add the broken lasagna noodles. Reduce heat and simmer for about 15-20 minutes, or until the noodles are tender.
- In a small bowl, mix together the ricotta cheese, half of the mozzarella cheese, and half of the Parmesan cheese.
- To serve, ladle the soup into bowls and add a dollop of the ricotta mixture on top. Sprinkle with the remaining mozzarella and Parmesan cheese. Garnish with fresh basil leaves if desired.
Notes
- For a vegetarian version, substitute the meat with mushrooms or lentils and use vegetable broth.
- Add chopped spinach or kale during the last few minutes of cooking for added nutrition and flavor.
