Description

This Lazy Lasagna Soup delivers all the cheesy, meaty, saucy flavor of classic lasagna in a comforting and simplified crockpot-friendly soup. With hearty ground beef, tender noodles, fire-roasted tomatoes, and a trio of melty cheeses, it’s the ultimate weeknight comfort food—minimal effort, maximum flavor.


Ingredients

1 pound extra lean ground beef
1 small onion, diced
3 cloves garlic, minced
1 large red bell pepper, diced
1 (14.5 oz) can fire-roasted tomatoes, crushed or diced
1 (24 oz) jar marinara sauce, preferably low sodium
1 tablespoon Italian seasoning
1/4 teaspoon red pepper flakes, optional
4 cups reduced-sodium beef broth
10 ounces whole wheat or fiber-enriched lasagna noodles, broken into pieces
Salt and pepper, to taste

For Topping
1 cup part-skim mozzarella cheese
1/2 cup ricotta cheese
Freshly grated parmesan cheese
Chopped parsley or fresh basil


Instructions

In a large skillet over medium-high heat, brown the ground beef for 4 to 5 minutes until cooked through. Drain excess fat. If your crockpot has a sauté function, you may do this step directly in the crockpot.
Transfer the beef to the crockpot. Add diced onion, minced garlic, red bell pepper, fire-roasted tomatoes, marinara sauce, Italian seasoning, red pepper flakes, and beef broth. Stir everything well to combine.
Cover and cook on low for 6 to 8 hours or on high for 3.5 to 4 hours.
About 30 to 45 minutes before serving, stir in the broken lasagna noodles. Cover and continue cooking on high until noodles are tender.
Ladle soup into bowls and top with a generous tablespoon of ricotta cheese, a sprinkle of mozzarella and parmesan, and chopped parsley or basil for a fresh finish.

Notes

Use whole wheat or fiber-enriched noodles for added nutrition, or substitute with gluten-free pasta if needed.
Add spinach or chopped kale during the last 30 minutes for an extra veggie boost.
This soup is freezer-friendly—store without the noodles, then cook fresh noodles when reheating.
To thicken the soup further, let it sit uncovered for a few minutes before serving.
