A delicious and healthy recipe for Lemon Butter Salmon served with crispy potatoes and broccoli, perfect for a quick weeknight dinner.
Ingredients
- 2 (6-ounce) salmon fillets
- 2 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 lemon (zested and juiced)
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 pound baby potatoes, halved
- 2 cups broccoli florets
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them out on one side of the prepared baking sheet in a single layer.
- Roast the potatoes in the preheated oven for 20 minutes.
- While the potatoes are roasting, prepare the salmon. In a small saucepan over medium heat, melt the butter. Add the minced garlic, lemon zest, lemon juice, dried thyme, salt, and pepper. Stir to combine and remove from heat.
- After 20 minutes, remove the baking sheet from the oven. Add the broccoli florets to the other side of the baking sheet and drizzle with a little olive oil, salt, and pepper. Place the salmon fillets on top of the broccoli and brush generously with the lemon butter mixture.
- Return the baking sheet to the oven and roast for an additional 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the potatoes are golden and crispy.
- Remove from the oven and let rest for a few minutes. Garnish with fresh parsley before serving.
Notes
- For extra crispiness, you can parboil the potatoes for 5 minutes before roasting.
- Feel free to substitute the broccoli with asparagus or green beans for a different flavor profile.
