Description

Ingredients

  • 2 (6-ounce) salmon fillets
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 lemon (zested and juiced)
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 pound baby potatoes, halved
  • 2 cups broccoli florets
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, toss the halved baby potatoes with olive oil, salt, and pepper. Spread them out on one side of the prepared baking sheet in a single layer.
  3. Roast the potatoes in the preheated oven for 20 minutes.
  4. While the potatoes are roasting, prepare the salmon. In a small saucepan over medium heat, melt the butter. Add the minced garlic, lemon zest, lemon juice, dried thyme, salt, and pepper. Stir to combine and remove from heat.
  5. After 20 minutes, remove the baking sheet from the oven. Add the broccoli florets to the other side of the baking sheet and drizzle with a little olive oil, salt, and pepper. Place the salmon fillets on top of the broccoli and brush generously with the lemon butter mixture.
  6. Return the baking sheet to the oven and roast for an additional 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the potatoes are golden and crispy.
  7. Remove from the oven and let rest for a few minutes. Garnish with fresh parsley before serving.

Notes

  • For extra crispiness, you can parboil the potatoes for 5 minutes before roasting.
