A quick and delicious recipe for Lemon Herb Foil Pack Chicken, perfect for grilling or baking.
Ingredients
- 2 large boneless, skinless chicken breasts (about 1 pound total)
- 1 cup cherry tomatoes, halved
- 1 medium zucchini, sliced
- 1 medium yellow bell pepper, sliced
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 2 teaspoons dried Italian seasoning
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your grill to medium-high heat (about 375°F to 400°F). If using an oven, preheat to 400°F.
- Cut two large pieces of aluminum foil, about 12 inches long each.
- In a small bowl, whisk together olive oil, lemon juice, Italian seasoning, garlic powder, salt, and pepper.
- Place one chicken breast in the center of each piece of foil. Drizzle half of the olive oil mixture over each chicken breast.
- Top each chicken breast with equal amounts of cherry tomatoes, zucchini, and bell pepper.
- Fold the sides of the foil over the chicken and vegetables to create a sealed packet, making sure there are no openings for steam to escape.
- Place the foil packets on the grill or in the oven. Cook for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F.
- Carefully open the foil packets (watch out for steam) and garnish with fresh parsley before serving.
Notes
- For added flavor, marinate the chicken in the olive oil mixture for 30 minutes before cooking.
- Substitute the vegetables with your favorites, such as asparagus or broccoli, for a different taste.
