Description

A refreshing and flavorful summer dish featuring grilled chicken marinated in lemon and herbs, served with tender zucchini and squash.


Ingredients

  • 2 boneless, skinless chicken breasts (about 1 pound total)
  • 2 medium zucchinis, sliced into rounds
  • 2 medium yellow squashes, sliced into rounds
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons dried oregano
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your grill to medium-high heat. If using a grill pan, heat it over medium-high heat on the stove.
  2. In a small bowl, whisk together the olive oil, lemon juice, oregano, garlic powder, salt, black pepper, and red pepper flakes (if using).
  3. Place the chicken breasts in a resealable plastic bag or shallow dish and pour half of the marinade over them. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
  4. While the chicken is marinating, toss the sliced zucchini and squash with the remaining marinade in a separate bowl. Let them sit for about 15 minutes.
  5. Remove the chicken from the marinade and discard the used marinade. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F.
  6. During the last few minutes of grilling the chicken, add the zucchini and squash to the grill. Cook them for about 3-4 minutes on each side, or until they are tender and have grill marks.
  7. Once cooked, remove the chicken and vegetables from the grill. Let the chicken rest for a few minutes before slicing.
  8. Serve the sliced chicken on a plate with the grilled zucchini and squash. Garnish with fresh parsley.

  • For added flavor, try marinating the chicken overnight.
  • You can substitute the zucchini and squash with bell peppers or asparagus for a different vegetable option.
