Ingredients
- 2 cups rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup unsalted butter, melted
- 1/4 cup lemon juice (freshly squeezed)
- 1 tablespoon lemon zest
- 1/2 teaspoon vanilla extract
- 1 cup lemon curd (store-bought or homemade)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
- In a large mixing bowl, combine the rolled oats, flour, brown sugar, granulated sugar, baking soda, and salt. Stir until well mixed.
- Pour the melted butter into the dry ingredients and mix until crumbly. Reserve about 1 cup of this mixture for the topping.
- Add the lemon juice, lemon zest, and vanilla extract to the remaining mixture in the bowl. Stir until combined.
- Spread the mixture evenly into the prepared baking pan, pressing it down firmly to form a crust. Bake in the preheated oven for 15 minutes.
- Remove the crust from the oven and spread the lemon curd evenly over the top. Sprinkle the reserved crumble mixture over the lemon curd.
- Return the pan to the oven and bake for an additional 20-25 minutes, or until the topping is golden brown.
- Allow the bars to cool completely in the pan on a wire rack before cutting into squares.
