Description

Lemon Oatmeal Crumble Bars are a delightful dessert featuring a buttery oat crust topped with tangy lemon curd and a crumbly topping.

Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, melted
  • 1/4 cup lemon juice (freshly squeezed)
  • 1 tablespoon lemon zest
  • 1/2 teaspoon vanilla extract
  • 1 cup lemon curd (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking pan or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the rolled oats, flour, brown sugar, granulated sugar, baking soda, and salt. Stir until well mixed.
  3. Pour the melted butter into the dry ingredients and mix until crumbly. Reserve about 1 cup of this mixture for the topping.
  4. Add the lemon juice, lemon zest, and vanilla extract to the remaining mixture in the bowl. Stir until combined.
  5. Spread the mixture evenly into the prepared baking pan, pressing it down firmly to form a crust. Bake in the preheated oven for 15 minutes.
  6. Remove the crust from the oven and spread the lemon curd evenly over the top. Sprinkle the reserved crumble mixture over the lemon curd.
  7. Return the pan to the oven and bake for an additional 20-25 minutes, or until the topping is golden brown.
  8. Allow the bars to cool completely in the pan on a wire rack before cutting into squares.

Notes

  • These bars can be stored in an airtight container in the refrigerator for up to a week.
  • For a twist, try adding a handful of chopped nuts or dried fruit to the crumble mixture for added texture.
  • You can also substitute the lemon curd with your favorite fruit preserves for a different flavor profile.
