Ingredients
- 2 cups grated zucchini (about 2 medium zucchinis)
- 1 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup vegetable oil
- 1/2 cup unsweetened applesauce
- 3 large eggs
- 1 tablespoon lemon zest (from about 1 lemon)
- 1/4 cup fresh lemon juice (about 1 lemon)
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 tablespoons poppy seeds
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- In a large mixing bowl, combine the grated zucchini, granulated sugar, brown sugar, vegetable oil, applesauce, eggs, lemon zest, lemon juice, and vanilla extract. Mix well until fully combined.
- In another bowl, whisk together the flour, baking powder, baking soda, salt, and poppy seeds.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix; a few lumps are okay.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, cover it loosely with aluminum foil during the last 15 minutes of baking.
- Once baked, remove from the oven and let the bread cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely.

- For a lighter version, substitute half of the oil with additional applesauce.
