Ingredients

  • 1 cup dried green or brown lentils, rinsed
  • 8 ounces mushrooms, sliced (cremini or button)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 cup vegetable broth
  • 1 cup sour cream or Greek yogurt
  • 2 tablespoons soy sauce
  • Salt and pepper to taste
  • 8 ounces egg noodles or your choice of pasta
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a medium pot, cook the lentils in boiling water for about 20-25 minutes until tender. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.
  3. Add the sliced mushrooms and cook for an additional 5-7 minutes until they are browned and have released their moisture.
  4. Stir in the minced garlic, thyme, and paprika, cooking for another minute until fragrant.
  5. Pour in the vegetable broth and soy sauce, bringing the mixture to a simmer. Let it cook for about 5 minutes.
  6. Reduce the heat to low and stir in the sour cream or Greek yogurt until well combined. Add the cooked lentils and season with salt and pepper to taste. Heat through for another 2-3 minutes.
  7. Meanwhile, cook the egg noodles according to package instructions. Drain and set aside.
  8. Serve the stroganoff over the cooked noodles, garnished with fresh parsley.
