Description

Lentil Veggie Burger Patties are a delicious and nutritious alternative to traditional meat burgers, packed with protein and flavor.


Ingredients

  • 1 cup dry green or brown lentils
  • 3 cups water
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, grated
  • 1 medium zucchini, grated
  • 1/2 cup breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg
  • 2 tablespoons olive oil (for cooking)

Instructions

  1. Rinse the lentils under cold water and combine them with 3 cups of water in a medium saucepan. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until lentils are tender. Drain any excess water and let cool slightly.
  2. In a large mixing bowl, combine the cooked lentils, chopped onion, minced garlic, grated carrot, grated zucchini, breadcrumbs, parsley, cumin, smoked paprika, salt, and black pepper. Mix well.
  3. Add the egg to the mixture and stir until all ingredients are well combined. If the mixture is too wet, add more breadcrumbs, one tablespoon at a time, until it holds together.
  4. Divide the mixture into 6 equal portions and shape each portion into a patty.
  5. Heat olive oil in a large skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
  6. Serve the patties on whole-grain buns with your favorite toppings, such as lettuce, tomato, avocado, or a dollop of yogurt sauce.

Notes

  • For a spicier kick, add 1/2 teaspoon of cayenne pepper to the mixture.
  • You can substitute the egg with a flaxseed meal mixture (1 tablespoon flaxseed meal mixed with 2.5 tablespoons water) for a vegan option.
