Description
Lentil Veggie Burger Patties are a delicious and nutritious alternative to traditional meat burgers, packed with protein and flavor.
Ingredients
- 1 cup dry green or brown lentils
- 3 cups water
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 medium carrot, grated
- 1 medium zucchini, grated
- 1/2 cup breadcrumbs
- 1/4 cup fresh parsley, chopped
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- 2 tablespoons olive oil (for cooking)
Instructions
- Rinse the lentils under cold water and combine them with 3 cups of water in a medium saucepan. Bring to a boil, then reduce heat and simmer for about 20-25 minutes, or until lentils are tender. Drain any excess water and let cool slightly.
- In a large mixing bowl, combine the cooked lentils, chopped onion, minced garlic, grated carrot, grated zucchini, breadcrumbs, parsley, cumin, smoked paprika, salt, and black pepper. Mix well.
- Add the egg to the mixture and stir until all ingredients are well combined. If the mixture is too wet, add more breadcrumbs, one tablespoon at a time, until it holds together.
- Divide the mixture into 6 equal portions and shape each portion into a patty.
- Heat olive oil in a large skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
- Serve the patties on whole-grain buns with your favorite toppings, such as lettuce, tomato, avocado, or a dollop of yogurt sauce.
Notes
- For a spicier kick, add 1/2 teaspoon of cayenne pepper to the mixture.
- You can substitute the egg with a flaxseed meal mixture (1 tablespoon flaxseed meal mixed with 2.5 tablespoons water) for a vegan option.
