Ingredients
- 2 pounds russet potatoes, scrubbed and cut into 1-inch cubes
- 4 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1 cup cooked and crumbled bacon
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh parsley
Instructions
- Preheat your oven to 425°F.
- In a large bowl, toss the cubed potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until evenly coated.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy, stirring halfway through for even cooking.
- Remove the potatoes from the oven and sprinkle the shredded cheddar cheese and crumbled bacon over the top. Return to the oven for an additional 5 minutes, or until the cheese is melted.
- Remove from the oven and drizzle with sour cream. Top with chopped green onions and parsley before serving.
