Ingredients

  • 2 cups mashed potatoes (prepared and cooled)
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • 1/4 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 1/4 cup vegetable oil (for frying)

Instructions

  1. In a large mixing bowl, combine the cooled mashed potatoes, cheddar cheese, crumbled bacon, green onions, sour cream, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
  2. Add the flour and egg to the potato mixture. Stir until everything is evenly incorporated.
  3. Form the mixture into patties, about 3 inches in diameter and 1/2 inch thick. You should have approximately 8 cakes.
  4. Heat the vegetable oil in a large skillet over medium heat. Once hot, carefully add the potato cakes to the skillet, cooking in batches if necessary.
  5. Fry each cake for about 4-5 minutes on each side, or until golden brown and crispy. Remove from the skillet and drain on paper towels.
