Ingredients
- 2 cups mashed potatoes (prepared and cooled)
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, chopped
- 1/4 cup sour cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup all-purpose flour
- 1 large egg
- 1/4 cup vegetable oil (for frying)
Instructions
- In a large mixing bowl, combine the cooled mashed potatoes, cheddar cheese, crumbled bacon, green onions, sour cream, garlic powder, onion powder, salt, and black pepper. Mix until well combined.
- Add the flour and egg to the potato mixture. Stir until everything is evenly incorporated.
- Form the mixture into patties, about 3 inches in diameter and 1/2 inch thick. You should have approximately 8 cakes.
- Heat the vegetable oil in a large skillet over medium heat. Once hot, carefully add the potato cakes to the skillet, cooking in batches if necessary.
- Fry each cake for about 4-5 minutes on each side, or until golden brown and crispy. Remove from the skillet and drain on paper towels.
- Serve warm with additional sour cream or your favorite dipping sauce.

- For a spicier kick, add diced jalapeños or a pinch of cayenne pepper to the potato mixture.
