Description

Delicious Loaded Taco Cabbage Steaks topped with a savory meat and bean mixture, cheese, and fresh toppings.


Ingredients

  • 1 head of green cabbage
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup cooked ground beef or turkey
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 avocado, diced
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving

Instructions

  1. Preheat your oven to 400°F.
  2. Slice the cabbage head into 1-inch thick steaks. You should get about 4-6 steaks.
  3. Place the cabbage steaks on a baking sheet lined with parchment paper. Drizzle olive oil over the steaks and sprinkle with chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper.
  4. Roast the cabbage steaks in the preheated oven for 20-25 minutes, flipping halfway through, until they are tender and slightly crispy on the edges.
  5. While the cabbage is roasting, heat the cooked ground beef or turkey in a skillet over medium heat. Add the black beans, corn, and diced tomatoes, stirring until heated through.
  6. Once the cabbage steaks are done, remove them from the oven and top each steak with the meat and bean mixture. Sprinkle shredded cheddar cheese on top and return to the oven for an additional 5 minutes, or until the cheese is melted.
  7. Remove from the oven and garnish with diced avocado, sour cream, and chopped cilantro. Serve with lime wedges on the side.
