Description

Low Carb Cauliflower Breadsticks are a delicious and healthy alternative to traditional breadsticks, made with riced cauliflower and cheese.

Ingredients

  • 2 cups riced cauliflower (fresh or frozen)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 1/2 cup marinara sauce (for dipping)
  • Fresh basil leaves (for garnish, optional)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. If using fresh cauliflower, chop it into florets and pulse in a food processor until it resembles rice. If using frozen, thaw and drain excess moisture.
  3. In a large mixing bowl, combine the riced cauliflower, mozzarella cheese, Parmesan cheese, eggs, garlic powder, oregano, salt, black pepper, and crushed red pepper flakes (if using). Mix until well combined.
  4. Spread the cauliflower mixture onto the prepared baking sheet, shaping it into a rectangle about 1/2 inch thick.
  5. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the center is set.
  6. Remove from the oven and let cool for a few minutes. Cut into sticks and serve warm with marinara sauce for dipping. Garnish with fresh basil if desired.

Notes

  • For added flavor, mix in chopped herbs like parsley or thyme into the cauliflower mixture.
  • Experiment with different cheeses, such as cheddar or pepper jack, for a unique twist on the flavor.
