Ingredients
- 1 pound ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 medium zucchinis, diced
- 1 red bell pepper, diced
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 tablespoon tomato paste
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup shredded cheddar cheese (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent, about 3-4 minutes.
- Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.
- Stir in the diced zucchinis and red bell pepper. Cook for an additional 5 minutes until the vegetables are slightly tender.
- Add the diced tomatoes (with juice), tomato paste, paprika, oregano, basil, salt, and pepper. Stir well to combine and bring to a simmer. Reduce heat to low and let it cook for 10-15 minutes, allowing the flavors to meld.
- If using, sprinkle shredded cheddar cheese on top and cover the skillet for a few minutes until the cheese is melted.
- Serve hot and enjoy your low carb meal!

- For added flavor, consider adding a teaspoon of Worcestershire sauce or hot sauce to the mixture.
