A quick and delicious low carb stir fry featuring zucchini, mushrooms, and onions, perfect for a healthy meal.
Ingredients
- 2 medium zucchinis, sliced into half-moons
- 8 ounces mushrooms, sliced
- 1 medium onion, thinly sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon soy sauce (or tamari for gluten-free)
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1/4 teaspoon red pepper flakes (optional)
- 2 green onions, chopped (for garnish)
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced onions and sauté for about 3-4 minutes until they start to soften.
- Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
- Add the sliced mushrooms to the skillet and cook for 5-6 minutes until they release their moisture and begin to brown.
- Add the sliced zucchini, soy sauce, black pepper, salt, and red pepper flakes (if using). Stir well to combine.
- Cook for another 5-7 minutes, stirring occasionally, until the zucchini is tender but still slightly crisp.
- Remove from heat and garnish with chopped green onions before serving.
Notes
- For added protein, consider adding cooked chicken, shrimp, or tofu to the stir fry.
- Experiment with different vegetables such as bell peppers, broccoli, or snap peas for more variety and flavor.
