Description

A delicious and guilt-free Low Sugar Zucchini Bread recipe that is perfect for a healthy snack or breakfast.


Ingredients

  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsweetened applesauce
  • 1/4 cup vegetable oil
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large bowl, combine the grated zucchini, applesauce, vegetable oil, honey (or maple syrup), eggs, and vanilla extract. Mix until well combined.
  3. In another bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, cinnamon, salt, and nutmeg.
  4. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Be careful not to overmix.
  5. If using, fold in the chopped walnuts or pecans.
  6. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
