Ingredients
-
250g dark chocolate
-
200g milk chocolate
-
200g butter (or baking spread)
-
150g golden syrup
-
100g malted milk biscuits (or digestives, shortbread, or Hob Nobs), broken into chunks
-
75g mini marshmallows (gelatine-free if vegetarian)
-
200g Maltesers
-
75g Malteser Teasers or Maltesers Buttons (optional)
-
35g Maltesers, halved or whole, for decoration
Instructions
-
Line an 8-inch (20cm) square baking tin with parchment paper. Lightly butter the tin to help the paper stick.
-
In a saucepan over low heat, melt the dark chocolate, milk chocolate, butter, and golden syrup together. Stir until smooth. Remove from heat and allow to cool for 10 minutes.
-
In a large mixing bowl, combine the broken biscuits, marshmallows, Maltesers, and optional Malteser Teasers or Buttons.
-
Pour about two-thirds of the melted chocolate mixture over the dry ingredients. Stir well until everything is evenly coated.
-
Spoon the mixture into the prepared tin and press down firmly. Pour the remaining melted chocolate over the top, smoothing it into any gaps.
-
Decorate the top with the reserved Maltesers, pressing them slightly into the surface.
-
Chill the rocky road in the fridge for at least 3–4 hours, or overnight, until completely set.
-
Once firm, cut into squares or bars. Store in the fridge for up to 3 weeks, or in a cool, dry place for 1–2 weeks.
