Description

This Maltesers Rocky Road is a no-bake treat loaded with crunchy biscuits, chewy marshmallows, and crisp Maltesers, all coated in rich chocolatey goodness. Perfect for parties, picnics, or a sweet indulgence any time, it’s a fun and easy dessert with serious wow factor.


Ingredients

  • 250g dark chocolate

  • 200g milk chocolate

  • 200g butter (or baking spread)

  • 150g golden syrup

  • 100g malted milk biscuits (or digestives, shortbread, or Hob Nobs), broken into chunks

  • 75g mini marshmallows (gelatine-free if vegetarian)

  • 200g Maltesers

  • 75g Malteser Teasers or Maltesers Buttons (optional)

  • 35g Maltesers, halved or whole, for decoration


Instructions

  • Line an 8-inch (20cm) square baking tin with parchment paper. Lightly butter the tin to help the paper stick.

  • In a saucepan over low heat, melt the dark chocolate, milk chocolate, butter, and golden syrup together. Stir until smooth. Remove from heat and allow to cool for 10 minutes.

  • In a large mixing bowl, combine the broken biscuits, marshmallows, Maltesers, and optional Malteser Teasers or Buttons.

  • Pour about two-thirds of the melted chocolate mixture over the dry ingredients. Stir well until everything is evenly coated.

  • Spoon the mixture into the prepared tin and press down firmly. Pour the remaining melted chocolate over the top, smoothing it into any gaps.

  • Decorate the top with the reserved Maltesers, pressing them slightly into the surface.

  • Chill the rocky road in the fridge for at least 3–4 hours, or overnight, until completely set.

 

  • Once firm, cut into squares or bars. Store in the fridge for up to 3 weeks, or in a cool, dry place for 1–2 weeks.

Notes

  • Easy Swap: Use white chocolate or caramel-filled chocolate for a twist.

  • Make It Festive: Add mini eggs, crushed candy canes, or dried cranberries depending on the season.
