Description
This creamy and tropical Mango Pudding is silky smooth, lightly sweet, and bursting with fresh mango flavor. Made with just a handful of ingredients, it’s a refreshing dessert that sets beautifully in the fridge—perfect for warm days or a light finish to any meal.
Ingredients
For the Pudding (4 servings):
12 oz ripe mangoes, peeled, pitted, and diced
½ cup + 2 tablespoons full-fat coconut milk (or substitute with heavy cream, evaporated milk, or coconut evaporated milk for vegan)
2 tablespoons cold water
1½ tablespoons white granulated sugar
1½ tablespoons gelatin powder (or 1½ teaspoons agar agar powder for vegan option)
For Serving:
4 tablespoons evaporated milk (or coconut evaporated milk for vegan)

Peel, pit, and dice the mangoes. Blend until completely smooth, for at least 1 minute. For an extra silky texture, strain the purée through a fine mesh sieve.

In a mixing bowl, sprinkle the gelatin powder over cold water. Let it sit for 30 to 45 seconds to bloom—it will thicken and slightly smell, which is normal.

Add sugar, coconut milk, and the mango purée to the bloomed gelatin mixture. Stir or whisk until well combined.

Pour the mixture into a small saucepan and gently heat over medium-low heat. Whisk continuously for 3 to 4 minutes until the gelatin fully dissolves. Do not boil or simmer. If using agar agar, bring just to a boil, then immediately remove from heat.

Pour the mixture into greased bowls or silicone molds. Smooth the surface and optionally cover with plastic wrap to prevent a skin from forming.

Chill in the refrigerator for at least 6 hours or overnight until fully set.

Serve cold with a tablespoon of evaporated milk or its vegan alternative poured over each portion.
Notes
Use ripe Ataulfo or Champagne mangoes for the sweetest, creamiest flavor.
This pudding can be made ahead and stored in the fridge for up to 3 days.
Agar agar sets faster than gelatin—refrigeration time may be slightly reduced.
You can serve it directly in cups or unmold it for a plated presentation.
