Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- ¼ cup granulated sugar
- 2 ripe mangoes, peeled and diced
- 1 cup heavy cream
- ½ cup sweetened condensed milk
- 1 teaspoon vanilla extract
- 1 tablespoon lime juice
- ¼ teaspoon salt
- Fresh mint leaves for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined and crumbly.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan to form the crust. Bake for 8-10 minutes until lightly golden. Remove from the oven and let cool completely.
- In a blender or food processor, combine the diced mangoes, heavy cream, sweetened condensed milk, vanilla extract, lime juice, and salt. Blend until smooth and creamy.
- Pour the mango filling into the cooled graham cracker crust, smoothing the top with a spatula.
- Refrigerate the pie for at least 4 hours or until set. For best results, chill overnight.
- Before serving, garnish with fresh mint leaves if desired. Slice and enjoy!
