Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 3 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • ½ cup sour cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup maple syrup
  • 2 tablespoons bourbon
  • 1 cup heavy cream
  • ¼ cup brown sugar (for topping)

Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar. Mix until well combined.
  3. Press the crumb mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
  4. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  5. Gradually add 1 cup of granulated sugar, sour cream, eggs, vanilla extract, maple syrup, and bourbon. Mix until fully combined and smooth.
  6. Pour the cheesecake batter over the cooled crust in the springform pan.
  7. Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.
  8. Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight.
  9. Before serving, whip the heavy cream until stiff peaks form. Spread or pipe the whipped cream over the cheesecake.
  10. Sprinkle the brown sugar evenly over the whipped cream layer. Using a kitchen torch, carefully caramelize the brown sugar until it forms a crispy top. If you don’t have a torch, broil the cheesecake in the oven for 1-2 minutes, watching closely to avoid burning.
  11. Allow the caramelized sugar to cool for a few minutes before slicing and serving.

Notes

  • For a deeper flavor, use dark maple syrup instead of regular maple syrup.
  • Add a pinch of cinnamon or nutmeg to the cheesecake batter for a warm spice note.
