Description
A rich and creamy Maple Bourbon Crème Brûlée Cheesecake with a caramelized sugar topping.
Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 tablespoons granulated sugar
- 3 (8-ounce) packages cream cheese, softened
- 1 cup granulated sugar
- ½ cup sour cream
- 3 large eggs
- 1 teaspoon vanilla extract
- ¼ cup maple syrup
- 2 tablespoons bourbon
- 1 cup heavy cream
- ¼ cup brown sugar (for topping)
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
- In a medium bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of granulated sugar. Mix until well combined.
- Press the crumb mixture firmly into the bottom of the prepared springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let cool.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
- Gradually add 1 cup of granulated sugar, sour cream, eggs, vanilla extract, maple syrup, and bourbon. Mix until fully combined and smooth.
- Pour the cheesecake batter over the cooled crust in the springform pan.
- Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven and leave the cheesecake inside for an additional hour.
- Remove the cheesecake from the oven and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight.
- Before serving, whip the heavy cream until stiff peaks form. Spread or pipe the whipped cream over the cheesecake.
- Sprinkle the brown sugar evenly over the whipped cream layer. Using a kitchen torch, carefully caramelize the brown sugar until it forms a crispy top. If you don’t have a torch, broil the cheesecake in the oven for 1-2 minutes, watching closely to avoid burning.
- Allow the caramelized sugar to cool for a few minutes before slicing and serving.
Notes
- For a deeper flavor, use dark maple syrup instead of regular maple syrup.
- Add a pinch of cinnamon or nutmeg to the cheesecake batter for a warm spice note.
