A delicious and irresistible recipe for Maple Chili Glazed Koginut Squash, perfect for a healthy side dish.
Ingredients
- 2 medium koginut squash (about 2 pounds total)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup pure maple syrup
- 1 tablespoon chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper (adjust to taste)
- 1 tablespoon apple cider vinegar
- 1/4 cup chopped fresh parsley (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the koginut squash in half lengthwise and scoop out the seeds.
- Place the squash halves on a baking sheet, cut side up. Drizzle with olive oil and sprinkle with salt and black pepper.
- In a small bowl, whisk together the maple syrup, chili powder, garlic powder, cayenne pepper, and apple cider vinegar.
- Brush the maple chili glaze generously over the cut sides of the squash.
- Roast in the preheated oven for 30-35 minutes, or until the squash is tender and caramelized, basting with additional glaze halfway through cooking.
- Remove from the oven and let cool for a few minutes. Garnish with chopped parsley before serving.
Notes
- For a sweeter glaze, increase the maple syrup by 1-2 tablespoons.
- Try adding a sprinkle of crumbled feta or goat cheese on top before serving for added flavor.
