Ingredients

  • 2 large croissants
  • 4 large eggs
  • 4 slices of cooked bacon
  • 1/4 cup shredded cheddar cheese
  • 2 tablespoons maple syrup
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Fresh chives, chopped (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Slice the croissants in half and place them on a baking sheet, cut side up.
  2. In a medium bowl, whisk together the eggs, maple syrup, Dijon mustard, salt, and pepper until well combined.
  3. In a skillet over medium heat, scramble the egg mixture until just set, about 3-4 minutes. Remove from heat.
  4. On the bottom half of each croissant, layer a slice of bacon, a generous scoop of scrambled eggs, and a sprinkle of cheddar cheese.
