A refreshing and nutritious Marinated Broccoli Salad that combines fresh vegetables with a tangy marinade.
Ingredients
- 2 large heads of fresh broccoli, cut into florets
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1/2 cup shredded carrots
- 1/4 cup sunflower seeds
- 1/4 cup raisins
- 1/3 cup olive oil (for marinade)
- 1/4 cup apple cider vinegar (for marinade)
- 2 tablespoons honey (for marinade)
- 1 teaspoon Dijon mustard (for marinade)
- 1/2 teaspoon garlic powder (for marinade)
- Salt and pepper to taste (for marinade)
Instructions
- In a large mixing bowl, combine the broccoli florets, cherry tomatoes, red onion, shredded carrots, sunflower seeds, and raisins. Toss to mix well.
- In a separate bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, garlic powder, salt, and pepper until well combined.
- Pour the marinade over the broccoli mixture and toss to coat all the vegetables evenly.
- Cover the bowl with plastic wrap or a lid and refrigerate for at least 1 hour to allow the flavors to meld. For best results, let it marinate for 4 hours or overnight.
- Before serving, give the salad a good toss to redistribute the marinade.
Notes
- For added protein, consider mixing in some cooked chickpeas or grilled chicken.
- Feel free to substitute the sunflower seeds with chopped walnuts or almonds for a different crunch.
