Ingredients

  • 2 large heads of fresh broccoli, cut into florets

  • 1/4 cup sunflower seeds
  • 1/4 cup raisins
  • 1/3 cup olive oil (for marinade)
  • 1/4 cup apple cider vinegar (for marinade)
  • 2 tablespoons honey (for marinade)
  • 1 teaspoon Dijon mustard (for marinade)
  • 1/2 teaspoon garlic powder (for marinade)
  • Salt and pepper to taste (for marinade)

Instructions

  1. In a large mixing bowl, combine the broccoli florets, cherry tomatoes, red onion, shredded carrots, sunflower seeds, and raisins. Toss to mix well.
  2. In a separate bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, garlic powder, salt, and pepper until well combined.
  3. Pour the marinade over the broccoli mixture and toss to coat all the vegetables evenly.
