A delicious and healthy recipe for marinated grilled vegetables, perfect for summer barbecues.
Ingredients
- 2 medium zucchini, sliced into 1/4-inch rounds
- 1 medium yellow squash, sliced into 1/4-inch rounds
- 1 red bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 1 red onion, cut into wedges
- 8 ounces mushrooms, halved
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a large bowl, whisk together the olive oil, balsamic vinegar, minced garlic, oregano, basil, salt, and black pepper.
- Add the sliced zucchini, yellow squash, bell peppers, red onion, and mushrooms to the bowl. Toss to coat the vegetables evenly with the marinade.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
- Preheat your grill to medium-high heat.
- Remove the vegetables from the marinade, allowing excess marinade to drip off.
- Place the vegetables directly on the grill grates or use a grill basket. Grill for 5-7 minutes, turning occasionally, until the vegetables are tender and have nice grill marks.
- Remove from the grill and serve warm.
Notes
- For a smoky flavor, add a pinch of smoked paprika to the marinade.
- Try adding other vegetables like asparagus, eggplant, or cherry tomatoes for variety.
