Ingredients

  • 2 medium heads of cauliflower, cut into florets
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 425°F.
  2. In a large bowl, combine the cauliflower florets, olive oil, garlic powder, smoked paprika, salt, black pepper, and red pepper flakes (if using). Toss until the cauliflower is well coated.
  3. Spread the cauliflower in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for 25-30 minutes, or until the cauliflower is golden brown and tender, stirring halfway through for even cooking.
  5. Remove the baking sheet from the oven and sprinkle the roasted cauliflower with Parmesan cheese. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
  6. Once done, remove from the oven and drizzle with lemon juice and sprinkle with fresh parsley before serving.
