Description

A delicious and indulgent Marshmallow Chocolate Poke Cake that combines rich chocolate flavor with fluffy marshmallows and creamy whipped topping.

Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup mini marshmallows
  • 1 cup chocolate fudge sauce
  • 1 cup whipped topping (like Cool Whip)
  • 1/2 cup chocolate chips (optional for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk together until well blended.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat on medium speed for 2 minutes until smooth.
  4. Carefully stir in the boiling water (the batter will be thin). Pour the batter into the prepared baking pan.
  5. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes.
  7. Use the handle of a wooden spoon or a fork to poke holes all over the top of the cake.
  8. Pour the chocolate fudge sauce evenly over the cake, allowing it to seep into the holes.
  9. Sprinkle the mini marshmallows over the top of the cake.
  10. Allow the cake to cool completely, then spread the whipped topping over the marshmallows.
  11. If desired, sprinkle chocolate chips on top for extra texture and flavor.
  12. Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld.

Notes

  • For a richer flavor, try adding a teaspoon of espresso powder to the batter.
  • You can also substitute the chocolate fudge sauce with caramel sauce for a different twist.
  • For a festive touch, add sprinkles on top of the whipped topping before serving.
