Description

Delicious Medjool dates stuffed with creamy mascarpone cheese and drizzled with warm maple syrup, perfect for a sweet treat.

Ingredients

  • 8 large Medjool dates, pitted
  • 1 cup mascarpone cheese
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup chopped walnuts (optional)
  • 2 tablespoons maple syrup
  • Pinch of sea salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the mascarpone cheese, vanilla extract, ground cinnamon, and a pinch of sea salt. Mix until smooth and well combined.
  3. Carefully open each pitted date and fill it with about 1 tablespoon of the mascarpone mixture. If desired, sprinkle chopped walnuts inside the dates for added crunch.
  4. Place the stuffed dates on a baking sheet lined with parchment paper.
  5. Bake in the preheated oven for 10-12 minutes, until the dates are warm and slightly caramelized.
  6. While the dates are baking, warm the maple syrup in a small saucepan over low heat.
  7. Once the dates are out of the oven, drizzle the warm maple syrup over the top before serving.

Notes

  • For a chocolate twist, drizzle melted dark chocolate over the stuffed dates instead of maple syrup.
  • Substitute the mascarpone cheese with cream cheese for a tangier flavor, or use a dairy-free cream cheese alternative for a vegan option.
