Ingredients
- 1 pound ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 large egg
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried oregano
- 1/2 teaspoon onion powder
- 1 pound potatoes, peeled and diced
- 1 cup shredded cheddar cheese
- 1/4 cup milk
- 2 tablespoons olive oil
- 1/2 teaspoon paprika
Instructions
- Preheat the oven to 400°F.
- In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, pepper, oregano, and onion powder. Mix well until all ingredients are evenly incorporated.
- Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
- In a separate bowl, toss the diced potatoes with olive oil, paprika, and a pinch of salt. Spread the potatoes around the meatballs on the baking sheet.
- Bake in the preheated oven for 25-30 minutes, or until the meatballs are cooked through and the potatoes are tender and golden brown.
- Remove the baking sheet from the oven and sprinkle the shredded cheddar cheese over the meatballs and potatoes. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy!
Notes
- For a spicier kick, add 1/4 teaspoon of red pepper flakes to the meatball mixture.
- You can substitute ground turkey or chicken for a leaner option.
