Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon onion powder
  • 1 pound potatoes, peeled and diced
  • 1 cup shredded cheddar cheese
  • 1/4 cup milk
  • 2 tablespoons olive oil
  • 1/2 teaspoon paprika

Instructions

  1. Preheat the oven to 400°F.
  2. In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, pepper, oregano, and onion powder. Mix well until all ingredients are evenly incorporated.
  3. Form the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
  4. In a separate bowl, toss the diced potatoes with olive oil, paprika, and a pinch of salt. Spread the potatoes around the meatballs on the baking sheet.
  5. Bake in the preheated oven for 25-30 minutes, or until the meatballs are cooked through and the potatoes are tender and golden brown.
  6. Remove the baking sheet from the oven and sprinkle the shredded cheddar cheese over the meatballs and potatoes. Return to the oven for an additional 5 minutes, or until the cheese is melted and bubbly.
