Description

Meatloaf with Mashed Potatoes and Cheese is a delicious and easy-to-make dish that combines savory meatloaf with creamy mashed potatoes and melted cheese.


Ingredients

  • 1 ½ pounds ground beef
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • ½ cup milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 cup shredded cheddar cheese
  • 2 pounds potatoes, peeled and cubed
  • ½ cup butter
  • ½ cup milk (for mashed potatoes)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, egg, milk, Worcestershire sauce, salt, pepper, and thyme. Mix until well combined.
  3. Transfer the meat mixture into a loaf pan and shape it into a loaf. Bake in the preheated oven for 1 hour.
  4. While the meatloaf is baking, place the cubed potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.
  5. Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth and creamy.
  6. When the meatloaf is done, remove it from the oven and sprinkle the shredded cheddar cheese on top. Return to the oven for an additional 10 minutes, or until the cheese is melted and bubbly.
  7. Let the meatloaf rest for 10 minutes before slicing. Serve with a generous scoop of mashed potatoes on the side.
